Hill Country River Towns: Gruene, Canyon Lake & Wimberley

America's oldest continuously operating dance hall has been standing since 1878 — a tin-roofed wooden barn that has hosted Willie Nelson, Lyle Lovett, and the Dixie Chicks without changing a single plank of its character. A three-hour float down the Guadalupe through stands of bald cypress and limestone bluffs — the slow current and clear green water make this the quintessential Hill Country afternoon. Gruene Outfitters has been shuttling tubers since the 1970s; they handle the truck logistics.

Comal Springs feeds the largest spring system in Texas, and the Comal River runs cold and clear through Landa Park in the center of New Braunfels — kayaking the Comal in the afternoon after tubing the Guadalupe in the morning is a proper Hill Country double header. The park also has a miniature train and a spring-fed pool.

A New Braunfels craft brewery in the historic downtown, with a shaded biergarten and a rotating tap list. The German heritage of Comal County runs through the brewing culture — the lagers here are carefully made.

A 1.5-mile-long canyon that didn't exist before 2002, when the Guadalupe River carved through 100 million years of sedimentary rock in a single catastrophic flood. Exposed in the fresh-cut walls are dinosaur tracks, marine fossils, and rock strata that took 25 million years to form. Guided tours only — the Guadalupe-Blanco River Authority limits access to protect the geology.

A quiet park-managed boat launch on the north shore of Canyon Lake, away from the crowded marinas. Kayaks and SUP boards are available from several rental operations nearby; the clear water of the upper lake is particularly good for paddling early in the day before the ski boats appear.

A lakeside grill at the north end of Canyon Lake serving burgers, fish tacos, and cold drinks on a deck above the water — the straightforward menu and the lake view make it the obvious midday stop.

The stretch of Guadalupe River immediately below Canyon Lake dam runs cold year-round — the lake's cold bottom water released through the dam creates a spring-like river even in August. Rainbow trout are stocked here in winter; in summer the cold water and swimming holes below the first rapids are the best free spots in Comal County.

A Hill Country distillery in Spring Branch producing bourbon whiskey and vodka from Texas grains — the tasting room overlooks the live oaks and limestone creek banks that define the region's landscape. Evening tours and tastings are available on weekends.

Wimberley's most treasured swimming hole — a spring-fed pool on Cypress Creek shaded by a cathedral of ancient bald cypress trees, their roots in the limestone creek bed and their canopies forming a ceiling of green. Entry is by reservation only to preserve the experience; the water is clear and cold year-round.

Market Days in Wimberley (first Saturday of each month) is the largest outdoor market in the Texas Hill Country, with over 400 vendors selling antiques, art, jewelry, and artisan food across multiple fields around the town square. Even on non-market days the square has exceptional galleries and boutiques.

A Wimberley institution on the banks of Cypress Creek — a seasonal menu built around Texas ingredients served on a porch overlooking the creek. The lunch menu typically includes house-smoked meats, seasonal salads, and housemade sodas. One of the best meals in the Hill Country.

A vertical spring vent at the bottom of Cypress Creek — the water erupts upward from a cave system that extends 140 feet straight down, creating one of the most powerful natural spring flows in Texas. Snorkeling the vent and watching the upwelling is one of the stranger natural experiences in the state. Timed entry required.
